Food Matching Note:
Wonderful with full flavoured fish dishes, such as cajun crusted salmon or seared tuna steaks with pine nuts and basil pesto. Will complement white meats such as roasted poultry, baked pork or veal, and anything with mushrooms.

Tasting Note:
Ripe, crushed raspberries and leafy strawberry aromas preceede its dry, poised, elegant palate. There is some fine grained, well integrated tannin that adds structure and a persistant acidity lifts the ripe strawberry fruit flavours into a soft, dry, engaging finish.

Vinification Note:
Sourced exclusively from the single vineyard 'Les Chevrets' in Volnay. Whole bunches are hand picked, mostly destemmed and gently crushed, fermentation is in contact with the skins before racking and then finishing in french oak barrels. After a second racking, the wine is aged further in french oak before a light filtration and bottling.
