Food Matching Note: Roast turkey with herbed bread stuffing and giblet gravy, leg of lamb with a rosemary, lemon, and garlic crust and roasted potatoes or the traditional roasted rib-eye steak with herbed mustard sauce and root vegetables.
Tasting Note: This is a pretty, elegant wine, with attractive berry and cherry aromas. It is medium bodied with silky tannins and a long fleshy finish.
Vinification Note: 100% hand harvested from the 16.5ha vineyard, using a sorting table to discard unsuitable grapes. The wine making is performed in a brand new winery equipped with small capacity stainless steel vats allowing fermentation by individual parcels under the guidance of consultant Oenologist Michel Rolland. Ageing is for 15 to 18 months by individual parcel in oak barrels.
