Food Matching Note: Pairs very well with white meats such as chicken or veal. Particularly recommended to accompany fattened pullet, slow roasted veal or beef with vegetables or rich cheese.
Tasting Note: Pronounced nose of dark red fruits, earth and spices. The palate is medium bodied, quite muscular and with balancing tannins, displaying redcurrant and black cherry flavours with hints of vanilla.
Vinification Note: Sourced exclusively from 1.23ha of vines within Les Fleurieres vineyard, consisting of a loose, brown calcerous topsoil over a densely compacted strata of chalky limestone. This traps the water deep down, thus the water table remains constant even in the driest periods. The individual plots range from 25 to 50 years of age and are guyot pruned. Viticultural methods are completely organic. After hand harvesting, the grapes are sorted by hand, gently crushed and then left to cold macerate for 4 to 5 days. Fermentation begins naturally during this time due to wild yeasts. Fermentation lasts approximately 15 days before a gentle pneumatic pressing, the wine is then aged for 15 to 18 months in 50% new French oak. Bottling is without filtering or fining. Only 7000 bottles made in any year.
