DE GRAS Cabernet Sauvignon Reserva 2009
Grape Varieties
100% Cabernet Sauvignon from the Colchagua valley in the foothills of Chile's Andes.

Tasting Note:
Deep garnet in colour with hints of purple, has a classic nose of cassis and ripe berry fruit, with hints of spice. On the palate it is full bodied and jam packed, with a fine structure of ripe tannin, complex concentrated fruit and sweet spices.

Food Matching Note:
Ideal with roasted, grilled or barbecued red meats or perhaps even some hard cheese.

Vinification Note:
Destemmed crushed grapes were fermented at 26 to 28ºC with skin contact for 14 days. 60% of the wine was finished and aged for 18 months in American oak barrels. Malolactic fermentation was completed right after the alcoholic fermentation. The barrels were racked and refilled every three months, egg white fining before bottling, bottled unfiltered.
