Food Matching Note: Hibiscus-marinated leg of lamb, penne with stir-fried beef and red bell pepper or pork chops in beer teriyaki marinade.
Tasting Note: An intense nose of spice, chocolate and plums. On the palate the wine is well balanced with ripe, spicy fruit and a savoury character. The finish is long and elegant.
Grape: This is the classic Bordeaux partnership: Merlot for fruit, Cabernet for structure.
Location: From the Entre-deux-Mers region of Bordeaux in South West France.
Vinification Note: Sourced from vines planted in the early 1980's which are Single or double Guyot trained depending on the strength of the vine and density of the planting which yield 55 to 60 hl/ha. Traditional vinification with destemming of the harvest. Maceration for 12 to 20 days depending on the type of grapes. The temperature is maintained at around 30° during fermentation : the must is pumped over the cap at least twice a day. The wine is then aged for at least one year before bottling at the château.
