Botrytis Semillon is a very versatile wine style. It is naturally thought of as a dessert wine and is of course a perfect choice. We also love to serve it with cheese, particularly soft, ripe cheeses and good blue cheese accompanied by fresh fruit. It is the only wine for a lazy scrambled egg and smoked salmon Sunday brunch!

Tasting Note:
The lifted nose shows classic botrytis marmalade characters and deep honey notes. This is a wine of a remarkable intensity with superb weight of luscious honeyed fruit on the middle palate. This richness is beautifully counter-balanced by natural acidity and it finishes with a delightfully clean complexity.

Vinification Note:
The grapes are crushed and left on skins overnight before being pressed the next day. The juice is clarified, then fermented in French oak hogsheads and stainless steel tanks for 6 months before bottling.
