Rich and juicy red meats or game.

Tasting Note:
An iron fist in a very elegant velvet glove. Ruby in the glass with an intense and complex nose. Notes include raspberry, cocoa, vanilla, pepper, blackcurrant and pepper. A full bodied palate with a dense weave of soft tannins. Very classy indeed.

Vinification Note:
South/South-East facing slopes at an altitude of 100/150m above sea level. The 20 year old vines are grown on Ferretto soil using the Guyot system at a vine density of over 6000 plants per hectare which are tended with non-certified organic principles. Fermentation takes place in a combination of stainless steel vats and barriques using an inocolution of a strain of indigenous yeasts. After malolactic fermentation the wine is then aged from 15-24 months in oak barrels depending on the grape variety.
