Chateau L'Ermitage
Château l'Ermitage has a heritage reaching back over 1,000 years to the ninth century, when the site was occupied by the Ermites of the ancient Sainte Cécile d'Estagel's Abbaye.
The first wine cellar was built around 1800 and for the past 30 years, Michel and Jérôme Castillon have been cultivating the 80 hectares of vineyards, producing a high quality selection of red, white, rosé and dessert wines.
The vineyards benefit from a southern aspect of the Costières de Nîmes, which dominates the Camargue and the Mediterranean areas of the South of France. Sunshine and fresh sea winds combine to create a microclimate particular to the Château. It is on this terrain, enriched by a stony soil deposited by the Rhône during the Quaternary era, that the famous grape varieties of the Rhône Valley - Syrah, Grenache, Mourvèdre, Roussane, Grenache Blanc and Viognier - grow.
Château l'Ermitage harvests and produces 4000 hl of wine. Its quality is the result of a particular mix of region, grape variety and selection, and managing the yield. Vinification tanks and a good proportion of new oak barrels improve this mix. De-stalking, careful temperature control in storage areas and, above all, the family's "savoir faire" are the trade tools of l'Ermitage's wines.
The results are finely balanced wines with their own distinctive flavours.

Type: AOC COSTIERES DE NIMES
Description: This wine is produced from low-yielding 20 year old vines (50hl/ha). The grapes are picked early in the morning to preserve their fruity aromas. All the harvest is destalked before being gently pressed. The grape must is cooled to 6°C for a natural clarification and vinified at a low temperature (16°C). The wine is then aged on thin lees to draw out the aromas of the Roussanne and Grenache grapes.
Tasting: Aromas of fresh peaches, pears, lychees and light floral tones. The Grenache provides the richness and the Roussanne the balancing acidity.
Food Match: Excellent on its own or with white meat, fish, seafood, risotto and salads.
Ageing: Ready for drinking now and over the next 2 years.

Type: AOC COSTIERES DE NIMES
Vinification: This special cuvée is produced from a selection of l'Ermitage's best white grapes from 20 year old vines. The grapes are picked early in the morning to preserve their finest fruit character. All the harvest is destalked before being gentle pressed. The grape must is clarified naturally by cooling to 8°C followed by controlled, low-temperature fermentation at 16°C. The wine is then aged for 3 months in new oak barrels.
Tasting: Aromas of nuts (from the oak ageing) and white fruits from the Roussanne are sustained by the grapes' natural acidity to give a full, well-balanced wine.
Food Match: Serve as an aperitif or with white meat, poultry, fish and in particular, with cream-based savoury dishes.
Ageing: Ready for drinking now and over the next 3 years.
