Oozing rich dried fruits and demerara sugar underpinned by warm alcohol flavours, Canasta Cream is opulent and smooth and is a big step up on other cream sherries. The finish is persistant, leaving sumptuous coating in the mouth. A very versatile drink, it's impossible not to like it.
AboutWhen we visited Williams and Humbert, we were captivated by the setup, from the magnificent cellars to the 'Solera' system which uses gravity to filter the sherry from barrel to barrel. Our host, Edward, guided us through the different types of sherries, from the dry, salty Fino to the amazing, 20 year old Dos Cortados. With a surprising array of flavours, their sherries are incredibly versatile - the Fino is superb with seafood and shellfish and the unbelievably rich Pedro Ximenez (PX) can be poured over ice cream. Perhaps most surprising is the complexity and finesse of these fortified wines (you would normally associate this with fine wines). There are sherries for nearly every occasion and meal.
Serve chilled as an ideal pre-dinner tipple. Canasta Cream is also excellent with rich chocolate desserts, ice cream and fruit cake and can be served as an alternative to ambre muscat or Rivesaltes. It is also delicious poured over crushed ice on a hot day.
