Planted on the rolling hills in Viile Timisului, the vines for this wine were replanted 12 year ago. Grown on a variety of soils, from dry clay to limestone rich loam, none of the vineyards are irrigated. Coupled with conventional New World viticulture and meticulous canopy management and training of the vines, this is the way to make high-quality, commercial wines.
A wine's colour and much of its characteristics come from the skin and the longer it is left (after pressing) on the skin, the darker and more tannic the wine becomes. Calsari Pinot Noir spends just 5-7 days fermenting on the skins and is vinified in stainless steel before being finished in American Oak casks. This clean, modern method of production ensures that the wines are fresh, true to their variety and don't acquire any unwanted characteristics that old-fashioned concrete tanks can impart.
Serve lightly chilled with fish or at room temperature with poultry and game. Also works well with soft and medium-hard cheeses such as brie, morbier, tomme, etc.
